Brinjal Pulav

 

Brinjal Pulav is definitely a great tasty dish which can be prepared in very less time with ease. Main ingredients are Brinjal, rice and spices. I have prepared it many times and it always tasted yummy. Do try and you definitely like it.
Cooking time : 30 minutes
Servings: 6



Ingredients:
Oil -1 table spoon
Bay leaf -2
Cumin seeds-1/2 teaspoon
Asafoetida -Pinch
Chopped green chilli - 1
Chopped Pudina/Mint leaves  -3 teaspoon
Ginger garlic paste - 2 tablespoons
Onion- 1/2 [Cut into small pieces]
Tomato -2 [Cut into small pieces]
Brinjals - 4
Biryani masala/Garam Masala -2 teaspoon
Red chilli powder -1teaspoon
Washed  Basmathi Rice - 2 cups 
Water - 4 cups
Chopped Coriander leaves-1/2 table spoon
Ghee - 2 teaspoon
Lemon juice -1 teaspoon
Salt as per taste
Carrot -1/2 cup
Breen Beans -1/2 cup
Green peas -1/2 cup


Method:

  1. Wash Brinjal and make thick slices and add into water so that it should not turn black. 
  2. In pressure cooker, Heat the oil.
  3. When oil is Hot add Bay leaves, cumin seeds or shaahi Jeera, Asafoetida and Ginger garlic paste.
  4. Mix well and Add Chillies, chopped onion and mint leaves and mix well
  5. Add Brinjal ,cilantro and chopped Tomatoes.
  6. Add dry spice -salt, red chili powder, Garam masala powder . If you have biryani powder you can add 2 teaspoons. 
  7. Add 4 cups water.
  8. When Water is Boiling, only at this point add 2 cups washed rice.
  9. Add Lemon juice and Ghee.
  10. Check the taste of water for proper salt and spices. If required add them at this point and Mix well.
  11. Close the pressure cooker lid. Let it cook in medium -high flame for 2 whistles. Switch off the stove.
  12. Leave it aside until the pressure subsides by itself and them open the lid. 
  13. Mix well and serve hot Brinjal pulao with Raita.
