Andhra Style Naatukodi Fry/countryside chicken fry

Countryside chicken fry/Naatukodi vepudu/fry in Andra style. Very spicy and delicious Chicken recipe. I prepared it and it tasted really awesome. the main ingredients is ofcourse chicken and lot of spices. The Andra style recipes are very spicy and delicious in taste. Its one of my favourite too. Servings : 4 -5


Ingredients:
For Dry Masala
Coriander seeds -1tablespoon
Dry Red chillies -3
Black Pepper -1/2tspoon
Star Anise -1
Black cardamom -1
Bay Leaf -1
Cinnamon-1 inch
Cardamom-2
Clove-4
Nutmeg powder-Pinch
Garlic -4

For Frying:
Chicken pieces -1kg
Oil-120ml
Curry leaves-2 sprigs
Dry red chillies -3
Green chillies -2
Ginger garlic paste -1 tablespoon
Turmeric powder-1/2tspoon
Coriander powder-2 tspoons
Red chilli powder -1 tablespoon
Water -2 cups
Chopped coriander leaves -1tablespoon
Curry leaves -2 sprigs
Cashewnuts -1 tablespoon
Salt as per taste

Method:

  1. For dry masala powder, Dry roast all the ingredients mentioned in the list above for dry masala, grind withput adding water and keep it ready
  2. Take a Kadai with thick bottom.
  3. Add 100ml oil.
  4. Add curry leaves, slit green chillies, dry red chillies and ginger garlic paste. Mix well.
  5. Add turmeric powder and salt.
  6. Fry it until oil oozes out well.
  7. Add coriander powder, red chilli powder. Mix for few minutes.
  8. Add chicken pieces, saute for few minutes.
  9. Add 2 cups of water- close the lid and cook in low flame until water evaporates completely and chicken cooks well.
  10. If chicken is uncooked, add some more water and cook well until its cooked well and becomes dry.
  11. You can also cook chicken in pressure cooker and add at this stage along with its water/soup, let the water to evaporate after adding at this stage.
  12. Now add the masala powder which was ready at the begining.
  13. Cook in high flame for 5 minutes.
  14. Roast the cashewnuts in a spoon of oil and add.
  15. Add cilantro and curry leaves.
  16. Naatukodi fry/Countryside chicken fry is ready to serve.
