Urad Dal Vada/Uddina vada is a soft fritter made from Urad dal , it is a very tasty, crispy, fluffysnacks/Breakfast along with Idly. They're known by many different names: urad dal vada, garelu, uzhunnu vada, uddina vada, ulundu vadai. It is very famous in Karnataka, India. The main ingredients are Urad dal, onion, , ginger and green chillis. The dercription is below. Do prepare and enjoy the tasty recipe.
Preparation time: over night soaking of urad dal and preparation takes about 20 minutes.
Ingredients:
Urad dal- 2 cups (Soaked overnight and smoothly grind it to get thicker batter just like lightly thick butter)
Black pepper- 1/2 tsp (coarsely ground)
Chopped Curry leaves
Ginger- 1/2 inch ( grated or finely chopped)
Chopped Green chilli -3 nos
Salt- as per taste
Chopped Coriander leaves -1 tbsp
Chopped Onion -1 cup
Coconut - 1 tbsp (use finely chopped fresh coconut)
Oil for Deep Frying

Urad dal- 2 cups (Soaked overnight and smoothly grind it to get thicker batter just like lightly thick butter)

Ginger- 1/2 inch ( grated or finely chopped)

Chopped Coriander leaves -1 tbsp
Chopped Onion -1 cup
Coconut - 1 tbsp (use finely chopped fresh coconut)
Oil for Deep Frying
Method:
- Wash the Urad dal.
- Soak The urad dal overnight or for 5 hours and drain the water.
- Grind it to get smooth and lightly coarse batter.
- Take the smoothly ground batter and thoroughly mix well to fill the air to the batter/dough and make it fluffy.
- Mix all the above ingredients and batter to get well blend mixture. The batter should not be too watery, it should be of Lightly thick butter consistency.
- Take oil for deep frying, Let the oil heat up.
- Apply water to your palm. Take a big lemon sized ball of the batter/dough
- & gently Make the ball.
- Make a hole in the middle and fry to golden brown.
- Take out the vada and drain oil on tissue
- Serve the fluffy crispy Medu vada with Mint chutney or coconut chutney.
