Mumbai Style Pav Bhaji

Pav Bhaji - 
It is a Traditional Maharashtrian Dish from India. Most of the people love this Pav Bhaji. Maharashtra people are very fond of Vada Pav. It is famous all over the world nowadays , Everyone can easily prepare and enjoy the tasty dish. 
Cooking time: 45 minutes
Serving : 10 servings
2 pavs/Buns and 2 cups of bhaji per serving

Ingredients:
For bhaji
Pressure cook :
Boiled and Mashed potato - 2 cups
Cauliflower -1 cup
Capsicum/Bell pepper -1 cup 
Carrot -1/2 cup
Red beetroot -1/2 cup
Fresh or frozen Green peas - 1 cup
Butter- 50 gms
Crystal Salt /powder salt -1 tspoon
Water -1 cup or 1.5 cups

Bhaji Tadka Preparation:
Chopped onions -1 cup
Ginger paste -1  tspoon
Garlic  Paste  -2 tspoons
Chopped Tomatoes -2 cups
Chopped coriander leaves/Cilantro -1/2 cup 
Pav Bhaji Masala - 1 tablespoon
Red chilli powder -2 tspoons
Salt as per taste
Turmeric powder -1/2 tspoon
Cumin Powder - 2tspoons
Food color -1/2 tspoon (Optional)

Pav Preparation:
Pavs/Buns/Hamburger buns -10
Pav Bhaji masala 
Cilantro
Butter


Method:
  1. To a pressure cooker, transfer all the ingredients/vegetables mention under pressure cook list and cook until it whistles 7 times. Let the pressure subside and become cool or warm. Mash it well into coarse paste. 
  2. If you don't have a pressure cooker, Transfer all the ingredients mentioned in pressure cook list to a large cooking bowl and cook until all the vegetables become mushy.
  3. If there is excess water just shift the water to a bowl and mash the vegetables well. This water you can use it later while preparing bhaji masala.
  4. Take one large tomato and make a puree of it.
  5. Take a large pan, add 1 tablespoon oil and 100grams butter
  6. When the butter melts, add chopped onion and ginger and garlic pastes.
  7. Keep stirring and cook
  8. When the onion becomes goldish color add Chopped tomatoes.
  9. Add 1 tablespoon of chopped cilantro.
  10. Let the tomato cook well and become mashy.
  11. Add 2 tspoons of red chilli powder and Pav Bhaji Masala 1 tablespoon
  12. Mix well and cook for 2 minutes.
  13. Add tomato puree and mix well. cook for 5 minutes
  14. Add 2 tspoons of cumin powder and salt as per the taste
  15. Now add the mashed vegetables paste into this and cook for 5 minutes.
  16. The bhaji will be ready
  17. Take a pan add 20 grams of butter, half tspoon of pav bhaji powder and cilantro and mix well
  18. Place the pav and cook on both side and add some butter if you need.
  19. Now the Pav Bhaji is ready to serve.
  20. How to eat it : Dip the piece of pav in Bhaji and eat it.
