Paani Puri Chat

Paani Puri is a famous chat in south india. It is similar to Golgappa, but the way of presenting the recipe along with variations in ingredients is different. This will be very very tasty and yummiest. Couldn't stop with few... The detail of preparation paani puri is provided below.
Preparation time
For poori/puri -40 min
For masala -30 min
Servings: 8 pani puri per plate.


Ingredients and Method:
Pooris:
Maida flour -2 tspoons
Chiroti rava/Sooji -2cup [around 75 pooris can be made] 
Oil -1/2tspoon
Salt 1/4 tspoon
Oil for deep frying

1. Take a mixing bowl add sooji rava, salt and warm water in small amount and can notice that the rava has softened. Then add maida and knead it well for 10 min. check if there is too much water then can add maida to adjust and get a stiff dough. Now add oil and knead it for another 5min. Keep it aside for 20 min

2. Take the dough and roll it to roti. Now with help of a round cookie cutter or a lid of any container , make the round pieces . 

3. In a pan take oil for deep frying, when it is hot add the round pieces and can notice its puffing up to become pooris. fry on both sides to get golden color and drain it on Tissue paper.

Paani :
Tamarind concentrate 1/2 cup
Finely chopped mint leaves 1 tspoon
Finely chopped coriander leaves 1 tspoon
Green chilli paste 1/4 tspoon
Jaggery powder 2 tspoon
Jeera powder-2 tspoon
Dhaniya powder -1 tspoon
Panipuri masala -3 tspoon
Chat powder-2 tspoon
Black salt-2 tspoon
salt if needed
Water -half liter or more can be added if you need less concentrated paani.

Mix all the above ingredients in a big bowl. Paani is ready [ Keep it in refrigerate for half an hour only if you need cold paani]

To Garnish and serve:
Chopped onion
Chopped tomatoes
Chopped coriander leaves
Grated carrot
Boiled green peas
Boiled and chopped potato and mix with redchilli powder and salt.
Om mixture
Lemon juice
Curd
Sweetness - Tamarind concentrate + jaggery powder/sugar + 1/2 tspoon of jeera powder

Take a plate, Make a hole in the poori, Fill it with garnishing items or can fill only potato and green peas. Then add the prepared paani and serve.
