Egg Masala Fry

Egg Masala Fry - Boiled Egg with onion, capsicum, tomatoes and Indian spices. It is an easy recipe and very tasty egg fry. This makes a good combination with Rotis, chapathis and can add on bread to make a sandwich too.

Preparation time: 20 minutes
Serving: 1 cup per serving




Ingredients:

Boiled Eggs - 3
Chopped Onion-1
Capsicum chopped- 1/4
Chopped Green chilli -3
Chopped Coriander leaves
Chopped Tomato- 3/4
Red chilli powder-1/4tspoon
Cumin powder-1/2 tspoon
Black pepper powder -1/2 tspoon
Turmeric powder-pinch
Ginger  paste -1/4 spoon
Garlic paste -1 spoon
Garam masala - 1/2 spoon
Coriander seeds powder - 1/4 spoon
Salt as per taste
Oil-1 tablespoon

Method:
  1. Take oil in pan, when oil is hot add chopped green chilli, onion, tomato, capsicum, Ginger garlic paste sauté and cook well.
  2. Add all the dry powder spices -Garam masala, red chilli powder, turmeric powder, coriander seeds powder, cumin powder, Black pepper powder. Mix well.
  3. Add salt a bit more to compensate the salty taste when egg is added or you can add salt later too.
  4. Cut the boiled eggs into small pieces and add into this and mix well.
  5. Garnish with cilantro/coriander leaves.
