Masala Stuffed Brinjal Bajji/fritters

Stuffed Masala Brinjal bajji is a tasty snack for evening or can be a good side dish with rice...its a tricky dish as brinjal should also boil well from inside and batter outside should not get burnt while deep frying it. The masala should also be filled in brinjal. The Complete description is given below.

Servings: 2 for 1 person





Ingredients:
Batter:
Gram flour-2 cups
Rice flour- 3 tspoon(optional)
Baking soda pinch
Salt-as per taste

For stuffing:
Chopped Onion-1
Chopped Coriander leaves -small quantity
Chopped Tomato-1
Red chilli powder-1/4tspoon
Turmeric powder-pinch
Ginger  paste -1/4 spoon
Garlic paste -1 spoon
Garam masala - 1 Tspoon
Coriander powder/ dhaniya powder - 1/4 spoon (optional)
Salt as per taste

Others:
Small Round Purple Brinjal 
Oil for Deep Frying

Method:

  1. Masala Stuffing: Take oil in pan, when oil is hot add Ginger garlic paste, chopped onion, tomato, garam masala, cook for 3 min and then add salt, red chilli powder, dhaniya/Coriander powder, turmeric powder and coriander leaves and mix well and cook.
  2. Method 1: Slit the brinjal from middle and stuff the filling masala as shown in picture/video. Roast this few minutes in oil so that the brinjal gets cooked.
  3. Method 2: Slit the brinjal and deep fry in oil for 2 minutes and then fill the stuffing.
  4. Mix all the ingredients mentioned above in  batter to dip Stuffed Brinjal. Add the water little
    by little to make a soft batter consistency.
  5. Deep fry the stuffed brinjal. Fry in low flame so that the brinjal cooks well from inside.
  6. Hot brinjal fritter/bajji is ready to serve.
