Mutton Kheema Balls curry

 

Kheema balls curry is a traditional south Asian meat food. Kheema curry is a well known recipe. It is prepared using minced lamb meat, which is blended with roasted gram, egg and spices and made to lemon sized balls. Kheema balls prepared this way is again cooked in spiced curry along with onion and tomatoes. It is a amazing curry to be mixed with rice and eat. Most of the people also eat this as side dish for Naan, roti, chapathi and Dosa. The keema is also used as stuffing for samosa or kachori.

Ingredients:
For Kheema balls:
Lamb meat Kheema -500gms
Red chilli paste- 2 tspoons (soak chillies overnight and grind to get paste)
Pepper powder -1 tspoon
Clove powder -1/2 tspoon
Cinnamon powder -1/2 tspoon 
Bengal gram/roasted gram powder -5 tspoons
Coriander  powder -2 tspoons
Chopped onion -1/2 cup
Chopped cilantro -2tspoons
Dill leaves [Optional] -1 cup
Salt as per taste
Egg -1 (Can add only egg white or whole egg)


For Curry Masala:
Coconut grated/Dried coconut -1 cup
Ginger - 1 inch
Garlic -10 cloves
Cinnmon powder -1/4 tspoon
Clove powder -1/4 tspoon
Coriander powder -2 tspoon
Cilantro/Chopped coriander leaves -1 cup
Red chilli powder -2 tspoon
Salt as per taste

For tempering:
Oil 
curry leaves
Mustard
Chopped onion 
Turmeric powder


Method:
[Be careful while adding salt as its used both in curry masala and kheema balls]

  1. Wash the kheema
  2. Put it in a mixie to get fine paste (optional)
  3. Add all the ingredients mentioned above for kheema balls and mix very well. 
  4. Egg and roasted gram powder gives a nice binding for the kheema balls. This avoids breaking of kheema balls un curry.
  5. Make Kheema balls of lemon size, Keep it ready in a plate.
  6. Grind all the ingredients mentioned in curry masala. Masala paste will be ready.
  7. Take a kadai/cooking vessel - add 2 tspoons of oil, mustard seeds, chopped onion, turmeric powder and curry leaves. fry for few minutes.
  8. Then add the grinded curry masala. add required amount of water. Bring it boil.
  9. When the curry is boiling add the Kheema balls into it slowly. Dont stir it. Leave it for few minutes.
  10.  Once its hard and sure enough it wont break, then can slowly stir from sides. 
  11. Cook the meat completely. it takes about 15 minutes to cook well.
  12. Switch off the stove when kheema balls are cooked well.
  13. Enjoy the tasty Kheema curry with Rice, Roti , Idly, Dosa or Chapati.
