Brinjal Masala Rice - Curry for Roti and Rice

 

Egg Plant Curry or Brinjal Curry: We prepare this Curry and Mix it with Rice to make it Brinjal Masala Rice or just make roti and enjoy Brinjal Curry with it. This is a very simple recipe and you will enjoy it,

Cooking Time: 30 minutes
Servings: For 4 Servings


Ingredients:

Indian Egg Plant/Brinjal - 2 to 3 big size
Oil -1 tablespoon
Salt as per Taste
Mustard seeds -1/2 teaspoon
Chopped Onion -1 cup
Chopped Tomato -1/2 cup
Garlci slices - 4 to 5 garlics
water - 1 cup

For Masala to Grind:
Chopped Tomato- 1 cup
Cilantro -1/2 cup
Ginger -1/2 inch
Garlic - 2 to 3
Clove powder - 1/4 teaspoon or 3 cloves
Cinnamon Powder - 1/4 teaspoon or 1/2 inch cinnamon stick
Coriander Powder - 2 teaspoons
Salt as per taste
Water -1 tablespoon

Method:
  1. Chop brinjal and put it in water and keep it aside so that brinjal will not turn out become black
  2. Now take the ingredients in Masala to grind list above in a mixie jar and grind it to get smooth paste
  3. Take a Kadai, Add 1 tablespoon of oil and when it is hot add mustard seeds and cumin seeds(optional)
  4. Add slices of Garlic and fry.
  5. Add chopped onion and fry it to golden color.
  6. Add Brinjal by draining the water and cook until it is half cooked. Add some salt.
  7. Mix well and add the grinded masala and 1 cup of water and cook well.
  8. Close the lid and cook but stir in between cooking.
  9. The tasty Brinjal curry will be ready.
  10. Mix the required quantity of Brinjal curry with Rice and enjoy the Brinjal Masala Rice.
  11. Also you can eat the Brinjal curry with Roti or chapathi too.
