Raw mango pickles are always delicious and mouth watering. The pickle is prepared very easily with very few ingredients. I have prepared small quantity, while preparing large quantity of pickles just increase the quantity of ingredients. Mango season is starting, prepare your home made pickles and enjoy.

Ingredients:
Big Raw Mango -1
Red chilli powder -5tspoons
Salt - 2 tspoons
Oil -1tablespoon
Turmeric powder- 1/4tspoon
Mustard seeeds -1tspoon
Methi seed/Fenugreek seeds-7
Garlic -10 cloves

Method:
- Cut mango to required size. Crush mustard seeds to coarse powder. Crush fenugreek seeds to powder.
- Take a big Mixing bowl add Raw Mango pieces, Salt, Red chilli powder, Mustard powder, Fenugreek seeds powder. Mix well. close the lid of container. Keep it for 1 hour.
- After an hour add the oil [Oil must be heated and cooled] to the prepared mixture. Add the raw garlic pieces. Leave it for a day in airtight container or can use instantly.
- Let the container stay for 2-3 days in room temperature, so that the Mangos absorb the spices and salt well.. Later store in refrigerator to preserve the crispiness of Raw mango and for more shelf life.
- Note: I used sunflower oil, it tasted excellent. Most of the pickles preparation is done using gingelly oil. If it gingelly oil, no need of heating, it can be used directly.
