Mutton Gravy

Mutton gravy is the dish prepared with Goat meat. It will be spicy, tangy, aromatic and awesome taste.
The recipe is for those whose favorite is mutton. It is prepared using Mutton cooked in pressure cooker and then blended with other ingredients/spices.
Preparation time: 60 minutes
Serving : 5pieces per serving




Ingredients:
Mutton -1kg 
Chopped Onion- 2 cups
Coriander powder- 4 tablespoon
Garlic paste -4 tspoons
Ginger paste-2 tspoons
Cardamom - 5
Clove -6
Cinnamon stick -1
Bay leaf- 2
Salt as per taste
Ghee - 4 tablespoon
Water-4 cups
yoghurt/curd -1 cup
Red chilli powder- 4 teaspoons
Chopped Tomatoes- 3 cups
Pepper powder-2 tspoons
Garam masala powder -2 tspoons
Turmeric powder -1/2 tspoon
Coriander leaves
Oil -1 tablespoon

Method:

To cook mutton:
  1. Clean the mutton and wash it well.
  2. Take a pressure cooker, add oil.
  3. When the oil is hot  add 2 cups of chopped onion, 1 cup of tomato, turmeric powder and crystal salt. Mix well and cook for 2 minutes.
  4. Add the mutton pieces and give nice stir until the raw smell of mutton goes away.
  5. Add 2 cups of water or water to immerse mutton pieces.
  6. Close the cooker and cook for 5 whistles.
To make Gravy:
  1. Take a kadai, add ghee.
  2. To the hot ghee add the spices clove, cinnamon, cardamom, bay leaf.
  3. Add Ginger paste  and garlic paste, stir until fresh smell of garlic ginger goes away.
  4. Add chopped onion 1 cup and fry until golden.
  5. Add Tomatoes and Mix well. Let it cook for 5 minutes to become juicy.
  6. Add coriander powder, Cumin powder, Garam Masala, Pepper powder, red chilli powder. Mix well.
  7. Turn off the flame. Let it become warm. 
  8. To the warm mixture add curd and give a good stir to get creamy texture. If you add curd to the hot mixture it will break and look like thin rava texture.
  9. Switch on the flame. Add the cooked mutton pieces along with stew.
  10. Mix all the ingredients well.
  11. Cook until the water is reduced to half or to the required gravy consistency and until mutton is completely cooked.
  12. Look for oil and ghee oozes out and gravy smells awesome.
  13. Garnish with Coriander leaves and mutton gravy is ready to serve
