Gulaab Jamun

Gulab Jamun is a milk solid based south asian sweet. This sweet tastes even if it is hot, cold or at room temperature. This is one of my favorite sweet. It is easy to make when we invite lot if guests for dinner. It is made using milk solids like khoya or milk powder. The detailed procedure of making Gulab jamun is mentioned below.

Preparation time:  45min
Serves: 25 Jamuns


Ingredients:
For Jamun:
Milk powder/Khoya -1cup
All purpose flour or maida -1/4cup
[Or can use Gulab jamun mix to do jamuns]
Ghee -1tspoon
Baking soda -Pinch
Warm Milk -1table spoon

For the sugar syrup:
Water  1cup
Sugar 1.5 cups
Cardamum powder-1/4tspoon
Lemon juice- 1/4tspoon

Method to make Sugar Syrup:

  1. Take a cooking bowl , add water and sugar.
  2. Keep this sugar solution on stove and cook till you get a syrup consistency or single thread consistency (When the syrup is placed between two fingers a thread should be formed on pulling fingers opposite sides). 

Method to make Jamuns:

  1. Take a bowl mix all purpose four, baking soda, milk powder/khoya well,/ Gulab jamun Mix- add  ghee and 1 tbsp of  warm milk.
  2. Mix and keep on adding little of warm milk to get a soft sticky mixture.
  3. The dough should not be dry. if it is dry add still more warm milk. close the lid and keep it aside to set for 15 minutes.
  4. Make smooth small balls from the dough.
  5. Heat the oil in a kadai and flame should be low.
  6. Add the balls and fry them stirring continously often to get golden brown color. [If its fried in very hot flame , internal part of ball will not be cooked] Take out the balls and drain the oil on a tissue paper and add them into the hot sugar syrup
  7. Let them soak for 2-3 hours in sugar syrup. So that they will become soft and juicy and tasty.
