Mushroom Biryani

Mushroom Biryani is prepared using Basmati rice , mushrooms and spices. I have used the easiest method to prepare a quick biryani. The biryani tasted very nice and refreshing. I have already posted the preparation of egg biryani, chicken biryani and vegetable biryani. The detailed recipe for Mushroom biryani is explained here.

Serves -4


Method and Ingredients:
Frying onions:
Onion long slits -1/2 cup
Oil -1tspoon

Biryani Masala:
Chopped mushrooms -2cups
Frozen indian green peas -1 cup
Butter -1tablespoon
Onion finely chopped -1/2 cup
Turmeric powder -1/4tspoon
Chopped Tomato -1 Cup
Green chillies -2
Kasuri methi -1tspoon
Ginger garlic paste -2tspoons
Mint leaves/Dried Mint leaves powder -2tspoons
Coriander powder/Dhaniya powder - 1tspoon
Red chilli powder- 1tspoon
Garam masala -2tspoons
Salt as per taste
Thick Ghee -4tspoons
Curd -1/2 cup

Boiled Rice Preparation:
Basmati Rice: 1.5 cups
Water: 3.5 cups
Clove: 2
Cinnamon -1 inch
Bay leaf - 1
Ghee/oil -1/4tspoon [Preferred ghee]
Salt -1/4tspoon

Garnish:
Chopped cilantro -1 tablespoon
Chopped Mint leaves -2tspoons

 Note:Be careful while adding salt, as the salt is used while preparing rice and also preparing    biryani masala1.


  1.  Preparation of Rice: Wash the Basmati rice well and soak it in water for 15 to 25 min. Drain the water. Take a cooking bowl, Add water 3.5 cups, salt, Oil/ghee, Cloves, Bay leaf, Cinnamon. Bring the water to boil. When water is boiling add the rice and cook it just for 5 min in high flame.Remove/Drain the remaining/excess of water from Rice. Rice is ready for biryani.
  2. Take 2tspoons of butter in a Frying pan, Add Long slits of Onion and saute it until it becomes golden to brown. Transfer it to a plate. 
  3. To the same pan add 3/4th tablespoon butter , When its hot add onion and mushrooms, green peas ,turmeric powder and little salt. Saute until well cooked.
  4. Then add all the ingredients mentioned in birayani masala one by one except Curd and saute it well and let all the ingredients get cooked.Switch off the stove. Let it become warm. Now add curd, Mix well. And again keep it on stove and cook for another 5 minutes. Biryani masala will be ready.
  5.  Layering: Take a cooker/ Big vessel which can fit rice and biryani masala. Add around 1 tablespoon of water, Add half the quantity of prepared Birayani masala along with mushroom and green peas, on this add/layer the rice, On this add the fried onions, Mint leaves, coriander leaves. Again add the biryani masala, Layer the rice, mint leaves and coriander leaves. Close the cooking vessel using Aluminuim foil. Place a plate on it so that biryani cooks well inside in steam. 
  6. Do not cook on direct flame. So place a tava on the stove, Above this keep the vessel/ cooker of biryani. Let it cook for just 4 minutes. Switch off the stove. cooking on tava is just avoid the charring of rice at bottom of cooker or vessel.
  7. Now after 3-4 minutes open the Aluminium foil and yummy Mushroom biryani will be ready. Enjoy with Raita.
