Vangibath Masala and Vangibath



Vangibath is a famous south indian dish. It can be a breakfast or for lunch or for dinner, it always tastes awesome. Most of the functions will have vangibath in maincourse. Many doesn't know how to prepare it but almost everyone loves the taste of it. So thought of giving a detailed recipe here. Vangibath is prepared using brinjal or egg plant along with spices.It will suit well to carry for picnics and trips.

Ingredients:
Vangibath masala:
Byadagi chillies [Less spicy variety] -8
Guntur chillies[ very spicy variety]-5
Coriander seeds/Dhaniya- 2tspoons
Urad dal -4tspoons
Chana dal -4tspoons
Cinnamon -1 inch
Clove -1
Asafoetida -Little quantity

Method:
Dry roast all for few minutes, let it cool and grind it to powder.Prepare more and can store it.
Or get one Ready Vangibath powder pack.

Vangibath:
Oil - 1 table spoon
Brinjal -3-4
Curry leaves
Dry coconut powder/ grated fresh coconut -2tspoons
Salt as per taste

Method:
  1. Take kadai, add oil. when oil is hot add brinjal[Chop to required size], curry leaves, salt. close the lid and cook in simmer until brinjal is cooked well.
  2. Add dry coconut powder and required amount of vangibath powder. Mix well. and cook for few more minutes , so that masala get blended with brinjal.
  3. Required quantity of this vangibath masala  is mixed well with cooked rice. Vangibath will be ready to serve.
