Brinjal Chutney/Pachadi

Brinjal chutney or pachadi is famous recipe in Andhrapradesh. It is a very refreshing and tasty recipe to enjoy as a side dish with food. It is prepared using brinjal , tomato, cilantro, green chilli and garlic. This also makes a very good combination for chapathi or jowar roti. The detail recipe is provided, do prepare and enjoy.
Preparation time:1 hour

Indian brinjal/Egg plant:4 medium size or 2 big size
Green chilli -8
Chopped Coriander leaves/Cilantro
Tomato- 2 small size [optional]
Garlic -10
Salt as per taste

  1. Keep Brinjal/Egg plant in direct flame of gas stove until its cooked, it will become soft [Can also Keep in oven at 300 degree farheinite for 50min or until its cooked properly] [ Also can   cook on charcoal fire/Barbeque]
  2. Fry Tomato, garlic, green chilli in on a pan , each separately. The tomato should soften, garlic should get half cooked and green chilli fried lightly.
  3. Remove the peel of tomato, garlic, Brinjal/eggplant.
  4. Crush/mash all the ingredients along with green chilli, coriander leaves and salt and blend it    properly using pestle and mortar. [Dont use Mixer grinder to grind or crush it]. Mix well.
  5.  A very tasty brinjal chutney ready to serve.
