Ingredients:
Oil -1table spoon
Chopped green chilli-2
Kasuri methi -3tspoons
Chopped Pudina/Mint leaves -3 tspoons
Ginger garlic paste -3tspoons
Onion- 1/2 [Cut into small pieces]
Tomato -1[Cut into small pieces]
Vegetables -carrot, cauliflower, capsicum, Frozen indian Green peas, Potato, Green beans
Garam masala or Chicken masala -2 tspoons
Red chilli powder -1 tspoon
Chopped Coriander leaves-1/2 table spoon
Ghee -4 tspoons
Lemon juice -3 tspoons
Coconut milk -1 cup
Salt as per taste
Washed Rice -2 cups
Water -3 cups
Note: Ratio = Rice 2 cups: Water 3 cups: Coconut milk 1 cup
Method:
- In pressure cooker, add oil , when oil is hot add the ingredients one by one in the same order as mentioned above except water and rice. Saute and mix well for few minutes after adding each ingredients.
- Now add rice and water.
- Check the taste of water in the cooker, Let there be small quantity extra of salt to get adjusted to the taste of rice when its cooked. Close the pressure cooker lid. Let it cook in medium flame for only 3-4 whistles. Switch off the flame.
- Open the lid once the pressure subsides. Mix well and serve hot with Raitha.
