Ingredients:
For Dosa:
Baking soda-1/4tspoon
Salt as per taste
Rice- 500gms [washed and Soaked in water for 5-6hours]
Urad dal & Chana dal -100gms & 50gms [Together washed and soaked for 6 hours]
Puffed rice/Avalakki -2tspoons[soaked in water for just 3 minutes]
Ghee
For red chutney:
Roasted chana dal/bengal gram-3tspoon
Byadagi/Red chilli -4 to 5
Salt as per taste
Ginger-1/4 inch
garlic -2
For Potato Masala:
Boiled potato - 3 medium size
Chopped onion -1/2 cup
Chopped green chilli- 4
Crushed ginger -1/2 tspoon
Chopped coriander leaves/cilantro- small quantity
Salt as per taste
Turmeric powder
Asafoetida/Hing-2 pinches
Oil -1/2 table spoon
For Peanut chutney:
Roasted peanuts -2 cups
Cilantro -1/2 cup
Dry roasted Mint leaves -20
Chopped and dry roasted Green chilli - 6
Dry Roasted garlic -5 cloves
Tamarind - Marble size
Salt as per taste
Method:
- Urad dal, chana dal can be soaked together for 5 to 6 hours and then grind to smooth paste.
- Grind Rice and puffed rice together, along with water to get thick pourable consistency batter. Transfer to big container, Add the urad dal, chana dala batter to this and mix well. Keep it in warm place overnight to get fermented. [Dont add salt and baking soda at this point] Batter should be not too thick or not too thin.
- Morning Add baking soda and salt. Mix well.
- Red chutney: add all ingredients mentioned under red chutney in a mixie and grind along with small quantity of water.
- For Peanut chutney: add all ingredients mentioned under red chutney in a mixie and grind along with small quantity of water.
- For Potato masala: Take a pan, add small quantity of oil, when oil is hot add mustard seeds, green chillis, crushed ginger, onion, asafoetida, turmeric powder and salt. Cook well. Add mashed potato and mix well.cook for 5 min.
- When tava is hot, sprinkle some water, When water evaporates, Spread dosa using the batter, Spread ghee on dosa, Spread red chutney. cook on one side only. Place the Potato masala on dosa.
- Enjoy dosa with peanut chutney.
