Tender Jackfruit roast

Jackfruit is rich source of vitamins and minerals. It is very healthy and tasty too. The raw or tender jackfruit can be used in making curry, stir fry/palya, fritters/bajji and also a roast. It makes a good side dish for the food. Tender jackfruit is marinated with a good amount of spices and shallow fried on a non stick pan. We often make it in our home as a side dish along with rice and curry. Make it in your home too as it is tasty and healthy too. The detail of the recipe is described below.

Preparation time: 30 min
Servings: 10

Ingredients:
Tender/RawJackfruit -1 [Sliced to 1cm thickness as in  the image]
Tamarind concentrate -1tablespoon
Red chilli powder -2tspoons
Black pepper powder-1tspoon
Turmeric powder- 1/4tspoon
Lemon juice -1tspoon
Salt as per taste

Method:

  1. Remove the gummy concentrate of tender jackfruit. Peel the skin. Clean it and slice them.
  2. Make a masala mixture of tamarind concentrate, red chilli powder, black pepper powder, salt, turmeric powder.
  3. Take a cooking bowl add the sliced jackfruit, add water to immerse the jackfruit and little salt. Let it boil for around 15 min in low flame or until its 3/4th cooked. Use a spoon and check whether it is cooked.
  4. Remove the raw jackfruit slices and drain the water. Put these slices in the Tamarind masala mixture to marinate. Keep it for 2 or 3 hours.
  5. Shallow fry on nonstick pan using small quantity of oil. close the lid and cook both sides in low flame.Since jackfruit is already cooked well it doesn't take much time to complete the dish.
