Kadleykaayi gojju is nothing but Peanut chutney made to gravy consistency and chopped onions are added to enhance the flavor. The peanut chutney is usually a combination for dosa or chutney but if it left over and stored in refrigerator, for urgency we can just take the chutney in a bowl, add water to get thin consistency and add chopped onions. Ingredients:
Peanuts/kadlekaayi beeja -2cups
Green chilli -6-7
Garlic -6 cloves
Mint leaves -2tablespoons
Tamarind -1 marble size
Cilantro /coriander leaves 1 table spoon
Chopped onion-1/4cup
Crystal salt/Powder salt as per taste
Method:
- Dry roast the peanuts and remove the skin of peanuts.
- Take a pan ,add half spoon of oil and dry roast garlic, green chilli and mint leaves.
- Add peanuts, mint leaves, garlic, green chilli, tamarind, coriander leaves, salt and sufficient quantity of water and grind to get smooth or coarse chutney.
- Transfer chutney to bowl, add chopped onions and required quantity of water, Mix well.
- Peanut chutney gojju is ready to serve.
