Drumstick flowers/blossoms Egg Bhurji

Drumstick Flowers/blossoms Egg Burji is a tasty dish and a great combination with roti or as side dish for lunch and dinner. Drumsticks and Drumsticks leaves are easily available in market but the drumstick flowers are very rare to find. But if you or your neighbors have the drumstick tree in their garden, you can easily get it. Drumstick flowers/Blossoms are very healthy and tasty. the aroma while cooking will be so nice. It is one of my favorite too. The description of dish is here. do try and hope you like it.

Preparation time: 25 minutes
Servings: 1 cup per serving

Ingredients:
Drumstick flowers-2 cups
Eggs - 3 to 4
Chopped Onion-1
Chopped Green chilli -3
Chopped Coriander leaves
Chopped Tomato- 1/2 (optional)
Red chilli powder-1 tspoon
Cumin powder-1/2 tspoon
Black pepper powder -1/2 tspoon
Turmeric powder-pinch
Salt as per taste
Oil- 3 tablespoon

Method:
  1. Take oil in pan, when oil is hot add chopped green chilli, onion and washed drumstick flowers.
  2. Let it cook well. Keep stirring and it may take around 10 minutes to completely cook.
  3. Add tomato, salt, red chilli powder, pepper powder, Cumin powder, turmeric powder and coriander leaves and mix well.
  4. Check the taste. The salty taste should be little extra to compensate when egg is added.
  5. Break the egg , Add to the pan, mix well with a ladle and stir until its cooked properly.
  6. You will get the exact texture as shown in the image.
  7. Great combination of side dish along with roti/Chapathi or rice and curry
