Ivy gourd /Tindoora/thondekaayi palya/sabzi is definitely a healthy and tasty recipe. Main ingredients are Ivy gourd, tomato, onion. Very few ingredients is used in this dish.This is a very very simple recipe and i have prepared it in my home style. Ivygourd palya makes a very good accompaniment for chapathi, poori and rotis, as well as with rice.

Ingredients:
Ivy Gourd - 1kg
Chopped onion -1
Chopped tomato-1/2
Curry leaves -few
Mustard seeds
Cumin seeds
Salt as per taste
Red chilli powder as per spiciness
Coriander leaves/cilantro
Oil -1 tablespoon
Method:
- Wash the Ivy gourd, Slice it into thin discs using a chips making slicer
- Heat the pan. transfer the slices of ivy gourd. Add 3 spoons of oil, small quantity of salt and mix it well
- Sliminess of Ivy gourd will disappear as well as it will be half cooked.
- Take an other cooking pan, heat the oil.
- Add mustard seeds, cumin seeds, chopped onion and curry leaves. Fry until onion is transparent.
- Transfer the Ivy gourd, mix well and cook well. Can sprinkle water to aid cooking.
- Add chopped tomatoes, red chilli powder and salt as per taste.
- Cook for 5 more minutes and garnish with coriander leaves.
- Ivy gourd subzi is ready to serve
