Scrambled Egg Gravy

Scrambled Egg Gravy is the recipe which I tried recently. Its yummy and made a great combination for the soft chapathis. It makes a good combination for roti, naan and can mix with rice and eat.Eggs are added to the spicy mix along with coconut milk onion, tomato, capsicum, green chillies. we usually prepare egg burji at home and ofcourse its a yummy dish, but I made this recipe with some variations. The description of the recipe is below.

Servings: 4

Ingredients:
Eggs- 4
Finely Chopped Onion - 2 cups
Finely Chopped tomato -1 cup
Finely Chopped capsicum-1/2 cup [optional]
Finely chopped green chillies -1 or 2
Finely chopped coriander leaves/cilantro
Curry leaves-6
Ginger garlic paste -1 tspoon 
Red chilli powder -1 tspoon
Coriander seeds powder-1/4 tspoon
Jeera/cumin powder -1/4tspoon [optional]
Garam masala powder -1/2 tspoon
Coconut milk -1/2 cup
Mustard seeds -1/4 tspoon
Salt as per taste

Method:
  1. Take a wok/non-stick deep pan. Add oil.
  2. To the hot oil, add mustard seeds, curry leaves, green chilli, onion, ginger garlic paste and salt. Cook for 2 minutes.
  3. Add capsium,tomato and let it cook for 2 minutes.
  4. Add red chilli powder,coriander seeds powder, Jeera/cumin powder, garam masala. Mix it.
  5. Reduce the flame.
  6. Add coconut milk, Mix and cook for 5 min in low flame.
  7. Now Break the eggs and scramble it finely. Add coriander leaves.
  8. Mix well and add some quantity of water to get the required gravy consistency.
  9. Cook for 5 minutes and the scrambled egg gravy is ready to serve.
