Veggie Bowl

Veggie Bowl is a Mexican style recipe. we usually would have eaten Veggie bowls in Mexican restaurants like chipotle. This is my version of Veggie bowl with variations to actual mexican style of cooking. This veggie bowl which I have prepared has totally 9 elements topped one on another to make a perfect veggie bowl. A different try from usual cooking. I have prepared this many times and loved the taste, It will be yummy. The complete description of preparation is provided below.

Preparation time: 45 min
Servings: 4-5 Veggie bowls

Ingredients and Method of preparation:

1. Lime -cilantro flavored rice:
Lime juice -2 spoons
Cooked rice -1 bowl
Coriander leaves/Cilantro -very little
Salt as per taste
Pepper powder -2 pinches
Bay leaf -1
Olive oil/cooking Oil/butter -2 spoons

Take a pan, add oil, when oil is hot add bay leaf,cooked rice, salt, pepper powder, chopped coriander leaves and finally lemon juice and mix well for 2-3 min.

2.Black beans:
Black beans -1 cup
Chopped tomato -1
Chopped cilantro - small quantity
Garam masala -1 tspoon
Pepper powder -2 pinches

Soak the black beans for about 6 to 8 hours or over night.Transfer them to a pressure cooker, Add salt and water and cook for 3-4 whistles.When pressure subsides, Add chopped tomato, cilantro, pepper powder, garam masala and cook for 5-6 minutes.

3.Fajita Mix:
Bell peppers/ Capsicum Yellow, Red, Green, Orange -Sliced mix of 2 cups
Onion Slices -1 cup
Pepper powder -a pinch
Salt as per taste
Vinegar -1 spoon [optional]
Olive oil/cooking Oil/butter -2 spoons

Take a Large pan, Add olive oil.Transfer Sliced onion and sliced capsicum.Add salt, pepper powder and vinegar.Fry them for 5 min.

4.Tomato Salsa
Chopped tomato -2 cups
Jalapeno -1 or less
Chopped Onion -1/2 cup
Salt as per taste

Transfer all the ingredients to a blender and make a rough paste.

5. Corn salsa
Boiled Corn -2 cups
Finely chopped onion -1 small
Green chilli/Jalapeno-1 Finely chopped
Lime juice -1 tspoon
Salt as per taste
Melted butter -1 tspoon

Take a bowl, Add all the above ingredients and mix well.

6. Guacamole
Guacamole -2
Lime juice -1/2 tspoon
Finely chopped onion -1/4 cup
Finely chopped jalapeno -1/2
Finely hopped tomato -1/4 cup [optional]
Salt as per taste

Scoop the avocados and transfer to a bowl. Add all the ingredients mentioned above and mix well

7.Sour cream
Fresh sour cream
Salt a pinch [optional]

Get Fresh sour cream available in stores Transfer required quantity to a bowl, add a bit of salt and mash well.

8.Chopped Lettuce

Required quantity of lettuce is chopped 

9.Shredded Cheese

Shred required quantity of cheese or get shredded cheese from stores.

Assembling into the plate
  1. When its ready, Take a plate or bowl. Add required quantity of rice and black beans. Top it with Fajita mix, Corn salsa,  Tomato salsa, Guacamole, sour cream, shredded cheese and lettuce
  2. The tasty veggie bowl is ready.
  3. You can eliminate adding cheese or cream as per your diet.
  4. We can make a chicken bowl too which has a chicken recipe instead of fajita mix, and all other 8 elements remain the same, will update it soon.
