Asparagus/Shatavari palya

Asparagus is a very healthy and tasty say vegetable, preparing it in easy and  Indian version is what I have tried here and it was very tasty. Asparagus is costly vegetable but very good in nutrients. Try this indian version of Asparagus recipe. The recipe is described below.

Ingredients:
Asparagus-1pound
Onion-1
Tomato-1/2
Curry leaves
Coriander leaves
Ginger garlic paste -1tspoon
Red chilli powder -2tspoon
Jeera /cumin powder- 1tspoon
Coriander powder -1tspoon
Vegetable masala powder/Garam masala- 2 tspoon
Turmeric powder -1/4tspoon
Mustard  -1/4tspoon
Jeera/cumin seeds -1/4tspoon
Salt-as per taste
Oil -1tablespoon

Method:

  1. In a Pan take oil, heat, add mustard, cumin seeds ,curry leaves, chopped onion and stir for 2 min.
  2. Add chopped Asparagus, ginger garlic paste, turmeric powder, salt and cook it with closed lid. stir in between.
  3.  When Asparagus is cooked well add Chopped tomato, Red chilli powder,  cumin powder, coriander powder,  vegetable masala/Garam masala, coriander leaves. 
  4. Cook for few more minutes and it will be ready to serve.
