Vegetable Saagu

Vegetable saagu is very famous in south India. it is a amazing side dish for Poori, Set dosa, Roti, Naans,Ghee rice, Jeera rice and other rice varieties. Though by looking at it we may feel it requires a tedious procedure, but it is very easy and simple to prepare. It do contain a lot of nutrients as many vegetables are added for the preparation. It is very old  and traditional recipe. Do prepare and let me know how it tasted.

Serves :10

Ingredients:
For Saagu masala:
Grated coconut -1cup
Chopped cilantro -3tspoons
Clove -2
Cinnamon -1/4inch
Roasted chana dal/bengal gram/hurigadale/pottu kadalai/pappulu -1/2cup
Green chillies-5-6
Roasted white Sesame seeds/Til -1/4cup
Roasted Poppy seeds/gasagase -1tspoon
Water -1tablespoon
Salt as per taste

Chopped & Boiled vegetables along with stew: 
carrot -1/4cup
Green beans -1/2cup
Green peas -1/2cup
Potato -1/4cup
Navilkosu/nukolu/kholrabi/turnip -1/4cup

Tempering:
Oil -3tspoons
Mustard seeds
Curry leaves
Bay leaf -1
Asafoetida
Chopped onion -1cup

Method:

  1. Grind the masala to a very fine and smooth paste.
  2. Keep ready the boiled vegetables along with stew.
  3. Add masala to the bowl of boiled vegetables.
  4. Place a pan, add oil, when its hot add mustard seeds, curry leaves,bay leaf asafoetida and chopped onions and let the onion cook well.
  5. Add this tempering masala with boiled vegetables and bring them to boil for around 6-10minutes [Can add water if required to get desired consistency and boil]. Ready to serve.
