Golgappa

Golgappa is a chat or street food in India, it is one such chats which is loved by everyone and no one can say no to this chat. it is immensely awesome, refreshing and tasty chat. when we are with friends we surely compete with them on who eats more golgappas and all can win, because no one wants to stop eating it... you also try and home and enjoy the hygienic chat at home itself...

Serves : 15

Ingredients:
For Pooris:
Maida flour -3 tspoons
Chiroti rava/Sooji -2cup [around 50 pooris can  be made] 
Oil -1/2tspoon
Salt 1/4 tspoon
Oil for deep frying
or just bring pooris from stores.

For Paani :
Tamarind concentrate 1/4 cup
Finely chopped mint leaves 1tspoon
Finely chopped coriander leaves 2tspoon
Green chilli paste 1/4tspoon
Jaggery powder 1tspoon[optional]
Jeera powder-2tspoon
Dhaniya powder -1 tspoon
Panipuri masala -3tspoon
Chat powder-1tspoon
Amchur powder -1/2tspoon [optional]
Black salt-1tspoon
Salt if needed
Water -300ml [more water can be added if you need less concentrated paani]

To Garnish and serve:
Chopped onion
Chopped coriander leaves
Boiled green peas/black chana -optional [I used Green peas]
Boiled and mashed potato and mixed with redchilli powder,salt, jeera powder and chat powder.
Sweet chutney - Tamarind concetrate + jaggery powder/sugar + 1/2tspoon of jeera powder [Sweet Chutney is optional]

Method:

  1. Take a mixing bowl add sooji rava, salt and warm water in small amount and can notice that the rava has softened. Then add maida and knead it well for 10 min. check if there is too much water then can add maida to adjust and get a stiff dough. Now add oil and knead it for another 5min. Keep it aside for 20min
  2. Take the dough and roll it to roti. Now with help of a round cookie cutter or a lid of any container , make the round pieces.
  3. In a pan take oil for deep frying, when it is hot add the round pieces  and can notice its puffing up to become pooris. fry on both sides to get golden colour and drain it on Tissue paper.
  4. Blend all the ingredients mentioned in paani in a blender along with little quantity of water.Then add required amount of water later.[ Keep it in refrigeratoe for half an hour,only if you need cold paani]
  5. Take a plate, Make a hole in the poori, Fill it with  garnishing items or can fill only potato and boiled black chana.Then add the prepared paani and serve tasty tasty golgappa.
