Brinjal palya

Good idea to store left over chapathi dough is to wrap in a cover properly and refrigerate it. Next day if you are lazy to prepare breakfast, Quickly you can just take out chapathi dough from refrigerator to make chapathi. As a side dish you can prepare brinjal palya very quickly and trust me its a very good combination with chapathi or roti.

Preparation time: 10min
Serves -3

Medium size chopped Brinjal -2cups
Chopped Tomato -1cup
Chopped onion -1/2 cup
Chopped cilantro
Curry leaves
Salt as per taste
Curry powder/saaru pudi -1tspoon
Red chilli powder -1/2tspoon
Oil -1/2tablespoon
Mustard seeds-1/4tspoon


  1. In a wok/pan, add oil when oil is hot add mustard seeds, curry leaves, chopped onion, chopped tomato, chopped brinjal, salt , turmeric powder. saute well.
  2. Add half cup of water and let them cook completely closing the lid.
  3. Now add red chilli powder and curry powder/saaru pudi/sambar powder and mix well.cook for another 3 minutes and brinjal palya is ready to serve to chapathi, roti.
