Baby lima beans along with carrot was a nice dish which made a good accompaniment with soft chapathi. Fresh lima beans and carrot being the main ingredients, they were mixed well with other spices to get a very tasty recipe

Baby lima beans - 250gms[soaked in water for overnight and boiled in cooker for two whistles]

Onion-1/2
Tomato-1/2
Curry leaves
Coriander leaves
Red chilli powder -2tspoon
Cumin Powder- 1tspoon
Coriander powder -1tspoon
Vegetable masala/Garam masala -2tspoon
Turmeric powder -1/4tspoon
Ginger garlic paste -1tspoon
Salt-as per taste
Oil -1tablespoon

Method:
- In a Pan take oil, heat, Add chopped Onion, carrot, Lima Beans , turmeric powder, ginger garlic paste ,salt and fry it by stirring in between by closing the lid of pan.
- Cook well and add chopped tomatoes, Red chilli powder, Cumin powder, Coriander powder, Garam masala/ vegetable masala, coriander leaves and mix well and fry for few more minutes.
