Chicken leg pieces/Drumsticks are marinated with curd and more spices and then cooked on tava or pan.
Kalmi kabab in restaurants are cooked in a clay oven called tandoor, but we at home cooked on a pan, as we cant manage a tandoor at home. Ingredients:
For Marination:
Chicken leg piece - 5 pieces
Corn flour - 2 tspooon
Curd/yogurt -10 tspoons
Kasuri methi powder -1 tspoon (optional)
Red chilli powder-1 to 2tspoon
Black pepper powder-1 to 2tspoon
Turmeric powder-2 pinch
Ginger garlic paste- 1/2tspoon
Garam masala -1/2tspoon
Food red colour- pinch (optional)
Dhaniya/Coriander seeds powder-1/2 tspoon
Lemon juice-few drops
Salt to taste
Oil for shallow frying
Method:
- Make slits on fleshy part of chicken legs and keep aside.
- Mix all the ingredients mentioned above in ingredients and apply it on chicken leg piece and inside the scars made on chicken leg pieces to marinate. Keep it for 3 hours or overnight in refrigerator.
- On a Tava add 2 tspoon of oil spread well and place marinated chicken leg pieces.
- Close the lid and cook for 3 min, again turn on other sides, add oil and cook for 3 min. repeat the same and cook all sides of chicken leg pieces until its cooked well.
- It takes 20 to 30 minutes to cook on tava by This time u can notice the chicken leg pieces are almost glossy dry and well cooked.
- To give it a tandoori effect of cooking in oven or barbeque, Take chicken leg piece and place/show it to flame of stove by turning the chicken piece all sides.
- Serve hot Tandoori Kalmi kabab on a plate and add few drops of lemon juice which makes kabab more tastier
- Cooking on charcoal fire: Make a fire using charcoal. Keep a mesh and support. Keep the Marinated chicken drumsticks/Or wrap chicken drumsticks using a aluminium foil and cook well/Or half cook the marinated chicken on a pan and then cook again completely on charcoal fire.
