Bangalore style Masala puri

Masala puri is very faous chat or street food in southern india. In different areas we get to eat different taste of masala puri and no where the taste of masala puri matches. So to prepare at home it is very easy. it is always hygienic and money saving though we have to spend some time to prepare it, but trust me, sitting together with family and having home made chat gives such a happiness which you will always cherish.



Preparation time: 2 hours
Serves-12

Ingredients:
For masala:
Chopped Onion -1
Chopped tomatoes-1
Grated coconut -1 cup
Toor dal boiled -1 cup
Green peas boiled -1tablesppon [ Dry peas soaked in water overnight and then boiled with salt and water]
Corainder leaves
Green chilli -2
Ginger -1/2 inch
Garlic-5
Clove -2
Cinnamon-1/2inch
Garam masala-1tspoon
Corn flour -1/2tspoon
Redchilli powder -2tspoon
Jeera powder-1 tspoon
Dhaniya powder-1tspoon
Chat powder -2tspoon
Panipuri masala -2tspoon
Black salt-1tspoon
Salt as per taste

Pooris:
Maida flour -2 tspoons
Chiroti rava/Sooji -2cup [around 75 pooris can  be made]
Oil -1/2tspoon
Salt 1/4 tspoon
Oil for deep frying

To Garnish and serve:
Chopped onion
Chopped tomatoes
Chopped coriander leaves
Grated carrot
Boiled green peas
Boiled and chopped potato
Om mixture
Lemon juice
Curd
Sweetness - Tamarind concetrate + jaggery powder/sugar + 1/2tspoon of jeera powder

Method:

  1. Take a pan and add 2tspoon of oil and the fry the onion, coconut, clove, cinnamon, coriander leaves, ginger, garlic. Add all these fried items, tomatoes, boiled toor dal and green peas, water into mixer and grind it to get smooth paste.
  2. Take a vessel and transfer the masala to it, add red chilli powder, dhaniya powder, jeera powder, garam masala, chat powder, corn flour and bring to boil for 10 min. then add black salt and switch off the flame. Check the taste to adjust the salt. Masala for masalpuri is ready
  3. Take a mixing bowl add sooji rava, salt and warm water in small amount and can notice that the rava has softened. Then add maida and knead it well for 10 min. check if there is too much water then can add maida to adjust and get a stiff dough. Now add oil and knead it for another 5min. Keep it aside for 20min
  4. Take the dough and roll it to roti. Now with help of a round cookie cutter or a lid of any container , make the round pieces.
  5.  In a pan take oil for deep frying, when it is hot add the round pieces  and can notice its puffing up to become pooris. fry on both sides to get golden colour and drain it on Tissue paper.
  6. Take a plate or bowl, Break 5 pooris, Add masala and small amount of all garnishing items and serve
