Egg Fried Rice

Egg friend rice is a Chinese recipe . Tasty, easy but yes time consuming because vegetables has to be chopped real fine and with a nice textures/shapes to make the egg fried rice look richer. Vegetables along with egg makes this dish  very tasty. This is real favorite of many people around the world. This fried rice is my version of preparing.
Preparation time: 45 minutes
Servings: 2 cups per serving

Boiled Rice(Basamati or Sonamasuri) -3cups
Eggs - 3 to 4
Sliced Onion-1/2 cup
Sliced Capsicum/ Korean pepper- 1/2cup
Frozen green peas -1/4cup
Chopped Cauliflower -1/2 cup
Sliced Carrot -1/4 cup
Chopped Spring onions
Chopped Cilantro
Cumin powder-1/2 tspoon (optional)
Black pepper powder -1/2 tspoon
Soya Sauce -2 tspoons
Chilly sauce -3 tspoons

Tomato Ketchup -3 tablespoons
Salt as per taste
Oil-1 tablespoon

  1. Keep the flame high. but make sure you are continuously stirring/Sauté.
  2. Take oil in pan, when oil is hot add chopped cauliflower, green peas along with salt, when they are half cooked, add onion, capsicum, carrot. cook them.
  3. Add cumin powder, black pepper powder, soya sauce, chili sauce.  Stir well
  4. Break the eggs & Stir well to cook.
  5. Add boiled rice and chopped spring onions, Mix well and sauté for few minutes. 
  6. Garnish with cilantro.
  7. Serve with Tomato ketchup.
