Egg burji, an easy and tasty side dish for rice curry or the roti of your choice. I prepare this tasty and easy side dish very quickly when I dont have much time to cook.

Eggs - 3
Chopped Onion-1
Capsicum chopped- 1/4
Chopped Green chilli -3
Chopped Coriander leaves
Chopped Tomato- 3/4
Red chilli powder-1/4tspoon
Cumin powder-1/2 tspoon
Black pepper powder -1/2 tspoon
Turmeric powder-pinch
Salt as per taste
Curry leaves
Oil-1 tablespoon

Method:
- Take oil in pan, when oil is hot add chopped green chilli, Curry leaves, onion, tomato, capsicum boil for 3 min and then add salt, red chilli powder, pepper powder, cumin powder, turmeric powder and coriander leaves and mix well.
- Let to cook.
- Check the taste of this mixture, the salty taste should be little extra to compensate when egg is added.
- Break the egg in a bowl or directly to the cooking pan.
- Add 50ml of water to get a broken texture and mix well. until the water evaporates and egg is cooked well.
